Happy Friday Eve!

After work yesterday, I went to the grocery to pick up some items for soft tacos.  I did not have any chicken or avocados or any of the good stuff other than cheese.  I picked up some snacks and lunch items for the kids also.  When I got home, Peyton had two friends over and Alli had one friend over.  I got all the groceries inside and put the chicken in the Instapot with seasoning and set it to go.  I went to the front room and noticed the Uno cards.  So, I called all five kids into the living room and we played an intense game of Uno Flip.  It lasted quite a while, but everyone joined in and had a blast.  Buster even tried to play, but we ended up playing tug of war with his rope instead.  Uno is really fun with a lot of people.  I ran derby practices at one of the leagues last night.  We did lots of fun things; worked on skills, played games, did endurance.
The kids ate the soft tacos and loved the instapot chicken.  It's seriously my favorite household appliance. 
While Alli was in Costa Rica, I was volunteering at Girl Scout Day Camp.  It was weird not having my daughter there.  It was the first year she has missed since Kindergarten.  She's a Teen Leader and loves it.  She's also an older teen, so more responsibility and fun having.  My volunteer job at camp....cooking for the masses.  I love it.  I plan, purchase food and prepare and serve it.  Most of the time it's for Teens and Staff only.  One dinner is for the entire camp though.
This year was an around the world theme.  For the teen dinner, I made Indian Food for them.  Chicken Tikka Masala, Butter Chicken, Korma Chicken, Jasmine Rice and Naan Bread.  It was a huge hit and not a single scrap of food was left.
For the all camp dinner, I made Enchiladas (chicken and beef) served with chips and salsa.  I made around 160 enchiladas.  That's a lot.  It took me a little bit of time.
This picture was when I left after serving dinner.  It was a big old storm approaching.  I'm glad I left when I did, because all the scouts had to move to the main building due to the lightening. 
Peyton is enjoying baseball for the most part.  He is running into home here.  He has two more games, one tonight and one on Friday night.

This is Fred.  He's obsessed with holding on to me.  It looks like his claw is stuck in my leg, but it's not.  He's a sweet, big, fluffy cat.    
And here is Kibben.  He also likes to cuddle my feet.  I don't know if it's because they lay at the end of the bed and that's where my feet are or what.
My car reached a milestone.  Don't worry, I was sitting at the stoplight when I took this picture. 
Today, the Governor of Missouri, announced that state employees would receive the 5th of July off.  Paid holiday!  I had already had the day off as I had requested leave, but now I do not have to use the vacation time and I can save up the time for our big family road trip next summer.
I worked a lot of OT in April and I've still not been paid out for it.  I called payroll and they have no idea why it hasn't gone into pay.  I had originally worked the OT to buy a new fridge.  Apparently, I didn't need to do that, I was able to get it just fine.  But it had a specific purpose and I didn't expect it to take over 2.5 months to pay out.  Now, it's just going to go into savings to put towards vacation.

  1. Hooray for getting off on the 5th. My husband used to get a 4 day weekend when the days fell like that, but now he doesn't.

  2. Okay, you have me seriously looking into getting an instapot. Which one do you have? Where'd you get it??
    Cute kitty, I love black cats. It's weird when 4th of July lands mid-week. Nice that you get Friday off. Enjoy!

  3. Abby -- I have the Instapot Duo. It was a Christmas Gift, but I'm pretty sure she got it at kohls, but I have seen the same one at both Target and Walmart. Amazon has it, but it's actually priced a little higher than it would be in the stores here. It is my favorite thing. It takes chicken from frozen to easily pulled apart in about an hour. It's about 30 minutes of pressure time, then you have the before/after pressure build up and release time.
    Black cats are the best! I would rescue all of them if I could, but I don't think the cats I already have would be pleased with that. :)
