New Year's Eve





 
Happy New Years!
Yes, only one child in the picture.
And we used a selfie stick.
It's fun.
The other was playing games or something like that...shocking, I know.
The other other one was at my moms, playing games.
 
Firecracker Shrimp
 
2 Tablespoons Sriracha
2 Tablespoons Olive Oil
2 teaspoons sugar
Garlic to taste
 
Mix it all together with the shrimp.
Marinade for a few hours.
Bake in 350 degree oven until they are done.
Keep an eye on them.
That's what I do.
 
 
Avocado Sauce
 
2 whole avocados
2 Tablespoons Sour Cream
Lime juice of one lime
Garlic
Sea Salt
 
Mix it all together until it's a smooth, creamy mix.
Spread on your taco.
 
I also made a chipotle shrimp as well as the firecracker shrimp.
 
It was just chipotle seasoning and butter in the pan with the shrimp while it baked.

 
Crab Bites
(somehow, I didn't get a pic of these)
 
2 cans of crab meat
3/4 cup shredded cheddar cheese
3/4 cup baking mix
1/2 cup bell pepper
1/2 cup milk
1 teaspoon seafood seasoning
2 eggs
 
Mix all of it together
Put into muffin cups
Bake at 375 degrees for 20-25 minutes.
Might take a little longer.
 
Best served warm
 
Spinach and Garlic Dip
 
1 pkg frozen chopped spinach
1 cup mayo (real mayo)
1 cup sour cream
1/2 parmesan cheese
1 teaspoon garlic powder (you might want more, taste it)
 
Mix all of this together and refrigerate for a minute or two or three.
 
New Year's Goal: LEARN HOW TO MAKE FROSTING RIGHT!!!!

Champagne Cupcakes
 
 
1 2/3 cups flour
1 cup sugar
1/4 teaspoon baking soda
1 teaspoon baking powder
3/4 cup butter
3 egg whites
1 teaspoon vanilla
1/2 cup sour cream
1/2 cup + 2 tablespoons champagne
 
Mix the first four ingredients first.
Add in all the other ingredient.
Stir it up into a pretty batter.
Let people try it to verify that it is awesome.
 
Bake in 350 degree oven for 18-20 minutes
 
Icing
 
1/2 cup butter
4 cups powdered sugar
4-5 tablespoons champagne
 
Mix it together.
Hopefully, it will turn out better than mine.
 
Butter Beer Jell-O Shots
 
1 cup cream soda
2 envelope plain gelatin
1/3 cup vodka (I used cake vodka, vanilla works too)
2/3 cup butterscotch schnapps
 
Pour SODA into a medium sauce pan and sprinkle with the gelatin.
Soak it a minute.
 
Heat over low heat, stir constantly until gelatin dissolves.
 
Remove from heat.
 
Add vodka and schnapps.
 
Pour into a pan and refrigerate
 
We had some overnight guests.
Sterling and another Mike.
They had traveled from New Jersey to San Diego
and we were on their return trip.
They wanted a Warm Christmas.
Didn't happen.
San Diego was cold.
Vegas was cold.
Colorado was really cold.
No warm Christmas for their haz.
